Cooking School, Biodynamic Gardens & Vineyard Napa
Executive Chef Carlo Cavallo opens his Italian designed home and extensive organic gardens to create a private cooking school in the Napa Valley. The school is be open to small groups only. Classes are tailored to the group’s expertise level, from culinary beginners to accomplished chefs who come to study the unique nature of regional Italian cuisine. All classes are taught in either a Hands-on or Demo environment. These Group classes limited to 10-12 students per class.
The Class starts by going into the gardens to collect fresh herbs, vegetables, and fruit. In the gardens you will learn Organic Biodynamic gardening techniques used at the Villetta.
Culinary highlights can include:
• Cheese making from goats milk collected at the Villetta
• Bread & Pizza making in the wood burning oven
• Preparation of traditional Italian cured meats
• Pasta making and Risotto technique
• Authentic regional recipes
• Pastry and Gelato techniques
• Six course-Nine course meals with wine pairing
Only the highest quality of the ingredients will be used at the cooking school. They are either grown in the garden, bought each morning from local markets, foraged locally, fished locally or imported from Italy, France and Spain. You will learn about the ingredients and the traditions around the dishes as well as food presentation and wine pairing.
Since classes are custom tailored to your group’s expertise and tastes by Chef Carlo, other types ethnic and world cuisines can also be explored.
Chef Carlo Cavallo is a former All-American athlete and teaches healthy lifestyle class. The class focus’s on learning about light and healthy cuisine and exercise tips, with cooking techniques and recipes that focus on great taste and low calories.
The school is marketed to the high end local and tourist clientele. The School is minutes away from boutique hotels and Inns such as Auberge de Soliel, Carneros Inn, Sonoma Mission Inn, Silverado Country club, Calistoga Ranch and Solage. High end destination tour operators such as Virtuoso and Viviani group offer this venue exclusively to their clientele.
