Villa Cavallo

Regional Italian Culinary School & Organic Farm 

Coming Soon, Executive Chef Carlo Cavallo of Sonoma-Meritage
Restaurant plans opens his Italian designed home and extensive organic
gardens as private cooking school for small groups in the Napa Valley.

Classes are tailored to the group’s expertise level, from culinary beginners to accomplished chefs who come to study the unique nature of Italy’s 20 regions.

Classes will encompass, organic gardening, farming, bread baking,
making, curing of salami & prosciuttos, wine pairing and of course
authentic regional Italian cuisine.


All classes are taught in a hands-on environment.
These Group classes limited to 10 students per class
.

The Class starts by going into the gardens to collect fresh herbs, vegetables, and fruit.
In the gardens you will learn organic gardening techniques used at the Villa.


The class then goes into the barn to collect eggs from chickens and to milk the goats.
In the Barn the class will learn about Animal husbandry and Food animals.


The class then begins in Chef Carlo’s state-of the art kitchen.

Only the highest quality of the ingredients will be used at the cooking school. They are either grown in the garden, bought each morning from local markets, foraged locally, fished locally or imported from Italy. You will learn about the ingredients and the traditions around the dishes as well as food presentation and wine pairing.


Since classes are custom tailored to your group’s expertise and tastes by Chef Carlo, other types ethnic and world cuisines can also be explored.


Chef Carlo Cavallo is a former All-American athlete and also teaches healthy lifestyle classes. The class focus’s on learning about light and healthy cuisine and exercise tips, with cooking techniques and recipes that focus on great taste and low calories.
